  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1 large egg
  • 3 tablespoons Dijon mustard
  • 3/4 cup flour
  • olive oil spray
  • Lemony Potato Avocado Salad
  • 1 1/2 pounds small red potatoes (about 12)
  • 4 tablespoons extra virgin olive oil
  • 4 tablespoons fresh lemon juice
  • 2 teaspoons grated lemon zest
  • 6 tablespoons fresh chives -- minced
  • 2 California avocado
  • Green Beans with Red Onion and Mustard Seed Vinaigrette
  • 3 tablespoons olive oil
  • 2 tablespoons mustard seeds
  • 1/3 cup red wine vinegar
  • 1 tablespoon sugar
  • 1 medium red onion -- thinly sliced
  • 2 cloves garlic -- minced
  • 1 1/2 pounds green beans -- trimmed
  • 4 pounds seedless watermelon -- cut in 1" cubes
  • 2 mangos -- peeled, pitted and cut in 1 inch chunks
  • 1 tablespoon fresh lime juice
  • 1 teaspoon finely grated fresh lime zest
  • 1/2 teaspoon sugar -- or to taste
