Ingredientes
- 2 1/2 c. flour, plain
- 1 tsp bicarb of soda
- 1/2 tsp mixed spice
- 1/2 tsp cinnamon, grnd
- 125 gm butter
- 1/2 c. brown sugar
- 5 Tbsp. honey
- 2 x Large eggs
- 3 Tbsp. lowfat milk
- 185 gm mixed fruit
- 1 Tbsp. mixed peel
Direcciones
- Sift flour, bicarb soda and spices together. Cream butter, sugar and honey in a mixing bowl, gradually add in beaten Large eggs and mix well.
- Add in sifted ingredients alternately with lowfat milk, mixed fruit and mixed peel. Drop tsp. on a greased baking tray and bake in a moderately warm oven (360F) for 15-20 min.
- Makes about 36.
- Serve with afternoon tea.
