- 24 ounce blackberries (2 bags if frzn)
- 3/4 c. powdered sugar, (sifted)
- 2/3 c. whipping cream
- 1 tsp lemon juice

- Okay, here's my Easy Blackberry Ice Cream (very popular in the Pacific NW since blackberries are everywhere). No Large eggs, and no cooking. Sorry, not non-fat because there is cream. Puree the blackberries in processor or possibly blender. Strain to remove seeds. Mix all ingredients, pour into ice cream maker, and process according to manufacturer's instructions. Transfer to separate container and freeze for about 2 hrs before serving.
