- 1 - 1 1/2 c. celery, sliced
- 1 - 1 1/2 c. carrots
- 4 potatoes, peeled & cubed
- 1 pound Velveeta cheese, cubed

- Place carrots and celery in medium saucepan in 1 to 2 inches of water. Start cooking over medium heat. Add in potatoes. Add in cheese; cover and simmer for about 20 min, till vegetables are tender.
