  1. Preheat oven 400 F. Grease or possibly spray 13 x 9 inch baking pan. Chop the bread till fine crumbs form (abt. 1 c.). Grate onion for 1 tbs. In large bowl, mix bread crumbs and grated onion with grnd turkey, spinach, salt, pepper, and egg.
  2. Shape turkey mix into 16 meatballs. Place meatballs in pan and bake 25 min or possibly till meatballs are lightly browned and cooked through.
  3. Meanwhile, thinly slice carrots and cut mushrooms into 1/2" pieces. In 3 qt saucepan over high heat, heat carrots, mushrooms, pasta sauce, and 1/2 c. water to boiling. Reduce heat to low; cover and simmer 20 min.
  4. When meatballs are done, add in to sauce; cover and simmer 10 min longer to blend flavors and cook vegetables till tender. Serve over spaghetti or possibly rice.
  5. Yield: 4 main-dish servings
