One of the many snack or lunch recipes that I enjoy to make. This gives a hearty meal where everyone can make their own meal to enjoy.

  1. Hard taco shells should be baked 4 minutes at 350 degrees F, or microwave 45 seconds.
  2. Soft 6-inch flour or corn tortillas can be heated in a dry skillet or on the grill. Only 30 seconds per side, or wrap in foil and bake 10 minutes at 400 degrees F. You can also wrap in a damp towel and microwave 1 minute.
  3. Fillings would be the following:
  4. Ground Beef : Saute 1 chopped onion and 2 minced garlic cloves in oil. Add 1 tablespoon chili powder; cook for 30 seconds. Add 1 pound ground pepper and cook until browned. Add 2 tablespoons broth, and salt to taste.
  5. Queso-Chorizo : Brown the diced dried chorizo in a skillet; remove with a slotted spoon.
  6. For veggie fillings: Dice some cucumbers and tomatoes, put in a bowl.
  7. Slice your choice of lettuce leaves, put in a bowl.
  8. For sauce toppings (optional) : Find the best salsa you like. Tostitos is good.
  9. If you like a selfmade salsa, this is my simplest way:
  10. Put all the ingredients in a food processor or blender and pulse to combine for 30 seconds or so until all the ingredients are finely chopped and salsa is desired consistency. Taste for seasoning and adjust to taste.
  11. For c heese toppings: Melt 1block cheese (your choice of cheese) in the skillet. Pour onto a bowl.
