  • 1 pkt Waitrose Smoked Mackerel Split Fillets, weighing approximately 150g (5 1/2 ounce)
  • 20 gm Butter, ( 3/4 ounce)
  • 1 x 225 g pack Waitrose Baby Spinach Salt and freshly grnd black pepper Grated nutmeg
  • 150 ml Waitrose Half Fat Creme Fraiche, (5fl ounce)
  • 10 ml Capers in vinegar, liquid removed (2tsp)
  • 4 x Waitrose Free Range Large eggs, (medium)
  • 125 gm Boursin with Garlic and Herbs
  • 45 ml Parmesan cheese, freshly grated (3tbsp)

Direcciones

  1. Skin the fish and roughly cut into chunks.
  2. Heat the butter in a large saucepan. Add in the spinach, cover and cook over a medium heat for 3 min till the leaves have wilted. Season, then stir in a little grated nutmeg and 30ml (2tbsp) of creme fraiche.
  3. Divide the spinach between two lightly greased individual gratin dishes.
  4. Top with the mackerel and capers.
  5. Make two depressions in the spinach mix in each dish and carefully break an egg into each hollow.
  6. Mix the remaining creme fraiche with the Boursin and hot gently to simmering point. Spoon over the spinach and fish and sprinkle with Parmesan cheese.
  7. Bake in a preheated oven 190 C, 375 F, gas mark 5 for approximately 20 min till the Large eggs are cooked and the dish is thoroughly heated.
  8. Serve immediately garnished with fresh chives and accompanied by hot crusty bread.
  9. NOTES : This supper dish combines the traditional flavours of Large eggs Florentine u spinach, Large eggs and cheese u with smoked fish and capers. Simply serve with hot crusty bread such as Waitrose brown flute.
