  • 1/2 cup Coriander, fresh
  • 2 cups Corn, frozen kernels
  • 3 Garlic cloves
  • 1/2 cup Onion
  • 1/2 tsp Oregano, dried
  • 1/4 cup Scallions
  • 1 (14.5-ounce) can Tomatoes, petite
  • 3 cups Chicken broth, low-sodium
  • 1 tsp Chipotle chile in adobo sauce
  • 1 (8-ounce) can Tomato sauce
  • 2 tsp Olive oil
  • Nuts & Seeds
  • 1 tsp Cumin, ground
  • Dairy
  • 3/4 cup Cheddar cheese, reduced-fat
  • 6 tbsp Sour cream, reduced-fat

Direcciones

  1. Cook Chicken and shred
  2. Add ingredients to Crockpot and warm.
  3. Top with Sour Cream and Cheese
