  1. Drain pineapple well. Cream margarine and sugars till light and fluffy.
  2. Beat in Large eggs. Beat in pineapple, carrots, raisins and vanilla extract.
  3. Combine remaining ingredients. Gradually, beat into pineapple mix till well blended. Pour into 4 greased and floured mini loaf pans ( 5 3/4 x 3")
  4. or possibly a 13 x 9" baking pan. Bake in a 350 degree oven for 40 min (50 to 60 min with larger loaf) or possibly till toothpick inserted comes out clean.
  5. Cold, completely. Spread with Silk Frosting, if you like.
