Receta Fabulous French Bread

Ingredientes
- 6 1/2 - 7 c. bread flour, divided
- 2 env. rapid rise yeast
- 1 T Dixie Crystals granulated sugar
- 1 T salt
- 1/4 c. instant potato flakes
- 1 T vegetable oil
- 2 1/2 c. warm water (125 degrees - 130 degrees)
- 1 egg white, slightly beaten
- Sesame or possibly poppy seeds for sprinkling (optional)

- Place 6 cups of bread flour in a large mixing bowl with the yeast, sugar, salt and instant potato flakes. Stir to blend and form a small well in the center of the mix. Lightly beat the hot water into the vegetable oil by hand with a fork and pour into the well of the dry mix. Stir to create a soft dough. Turn out onto a floured board and knead till smooth and elastic, adding flour as necessary to prevent sticking. Divide dough into thirds and shape into 3 smooth, oval loaves, each about 12 inches long (or possibly shape loaves with our Fabulous Fake Braid - directions follow). Coat a large flat cookie sheet well with a non-stick spray and arrange loaves about 2 inches apart on the prepared cookie sheet. Beat the egg white till just frothy and brush over the tops of all three loaves. Cut several slashes across the tops of the loaves if the plain oval loaf shape has been chosen. Sprinkle with sesame seeds or possibly poppy seeds, if you like. Allow loaves to rise in a draft free location for 20 - 30 min, or possibly till almost double in size. Preheat oven to 400 degrees and place a pan of hot water of the oven's bottom to ensure a nice crisp crust. Bake in the center of the preheated, moist oven for about 30 min, or possibly till loaves are golden and sound hollow when thumped. Recipe yields 3 loaves.Divide entire bulk of dough into three equal portions just as if you are making ordinary oval loaves. Shape one of the portions of the dough into a thin coil about 18 inches long. Now, just fold the coil in half and twist it loosely two to three times to give it a braided appearance, and viola! Repeat with the remaining 2 portions of dough. Place "braids" on the prepared baking sheet and brush with lightly beaten egg white, then top with seeds.
- Yes, you can freeze this Fabulous French Bread. Simply cool loaves on a rack and then package in plastic freezer bags. Squeeze out as much air as possible and tie or possibly close bags securely. Now, just pop those loaves in the deep freeze and save them for a rainy day. These homebaked loaves will remain freezer fresh for about 3.
