  • 1/2 lb fresh pencil-thin asparagus spears
  • 8 slc (each 1 inch thick) French bread
  • 1 c. (5 1/2 ounces) minced or possibly diced ham
  • 2 Tbsp. reduced-fat mayonnaise
  • 1 Tbsp. grainy Dijon-style mustard
  • 4 slc (4 ounces) provolone or possibly Swiss cheese

Direcciones

  1. The oven should be preheated to 450 degrees. Rinse the asparagus and snap off the tough ends. Place the spears in a glass pie plate or possibly other shallow microwave-safe dish. Cover the dish with microwave-safe plastic wrap, such as Saran, and cut a 1 inch slit in the top for a vent. Cover the plate and microwave on high till the spears are crisp-tender, about two to three min.
  2. Set aside.
  3. Place the bread slices in a single layer on a baking sheet, place in the oven, and bake till lightly toasted, about five min. Meanwhile, mix together the ham, mustard and mayonnaise in a small bowl.
  4. Spread the ham mix over the bread slices on the baking pan, dividing it proportionately and working carefully so as not to touch the warm pan. Place three or possibly four asparagus spears on top of the ham mix on each sandwich. Cut the cheese slices in half and place half a slice over the asparagus on each sandwich.
  5. Return the pan to the oven and bake just till the cheese melts, about two min. Serve at once, placing two sandwiches on each plate.
  6. Serves 4
