Receta Fasolakia Yiyantes Sto Fourno (Oven Baked Giant White Beans)

Ingredientes
- 2 lb Dry giant white beans
- 2 c. Oil
- 1 head of garlic
- 3 x Onions, med., minced
- 1 Tbsp. Celery, minced
- 1/2 c. Parsley, chopped Salt & pepper to taste
- 1 c. Warm water
- 1 3/4 lb Tomatoes, peeled,strained Or possibly
- 1 Tbsp. Tomato paste + 1 1/2 c water Addt'l water as needed
Direcciones
- Wash the beans, place in water, and soak them overnight. Drain them, then place in a pot of fresh cool salted water; cook for 45 minutes.; drain.
- Meanwhile, place oil, garlic, and onions in a baking pan and bake in preheated 350 F. oven till golden brown. Add in beans, celery, parsley, salt & pepper, and warm water. Bake 30 minutes. longer. Remove from oven, stir the beans, pour in tomatoes (or possibly diluted tomato paste). Return to oven and bake till only the oil remains.
