Receta Figs And Dried Cherries Poached In Syrup With Pistachios

Ingredientes
- 2 c. water
- 1/4 c. sugar
- 1/2 c. honey
- 1/2 x vanilla bean split lengthwise
- 1 pkt dry Calimyrna figs - (8 ounce) stemmed, and halved lengthwise
- 1/3 c. dry tart cherries - (abt 1 3/4 ounce)
- 3/4 c. plain nonfat yogurt (optional)
- 3 Tbsp. minced unsalted natural pistachios

- Combine 2 c. water and sugar in heavy medium saucepan. Bring to boil over medium-high heat, stirring till sugar dissolves. Stir in honey. Scrape in seeds from vanilla bean; add in bean. Add in figs and bring to boil. Reduce heat to medium-low; cover and simmer 15 min.
- Add in dry tart cherries; cover and simmer till figs and dry cherries are tender, about 10 min longer. Transfer fig mix to bowl. Refrigeratetill cool, about 3 hrs. (Fig mix can be made 1 day ahead. Cover and keep refrigerated.) Throw away vanilla bean. Divide fig mix among 6 bowls. Top each serving with dollop of yogurt, if you like. Sprinkle with pistachios.
