  • 1 x red onion, thinly, sliced
  • 1 Tbsp. dark brown sugar

  • 2 c. sherry vinegar honey

  • 24 x tomato, peeled, seeded
  • 2 x onion
  • 4 clv garlic
  • 3 ounce tomato, paste
  • 1 1/2 c. sweet and sour base

Direcciones

  1. Season foie gras with salt and pepperPan-fry (no oil) for 7 to 10 minutesPat dry with a paper towelToast pancettaTo assemble, toast hamburger bun. Place ketchup in the middle of the plate topped with one half of the bun.
  2. Layer as follows: onions, pancetta, foie gras, and greens Top with other half of bun. Drizzle green extra virgin olive oil around burger.
  3. For Onions:Saute/fry onions in oil till brownAdd brown sugar and caramelizeAdd soy sauce and season with salt and pepper.
  4. Sweet And Sour Base:For the sweet sour base, reduce all ingredients in a saucepan till thick, like ketchup.
  5. For Ketchup:reduce all ingredients, including sweet and sour base till thick.
