Receta Fragrant Lentil Rice (Nasi Parpu)

Ingredientes
- 1/3 c. lentils
- 1 c. long-grain rice
- 2 Tbsp. veg. oil
- 2 tsp chopped ginger
- 1 x walnut-size shallot minced
- 1 x green onion sliced
- 2 1/4 c. water
- 1/2 x carrot cut 1/4" cubes
- 8 x green beans cut 1/4" pcs
- 2 Tbsp. soy sauce (or possibly 1/2 tspn salt)
Direcciones
- Soak lentils in hot water to cover for 30 min; drain. Wash and drain rice.
- Heat oil in a 2-qt pan over medium heat. Add in ginger, shallot, and green onion. Cook, stirring, for 2 min. Add in lentils and rice; mix well. Add in water and bring to a boil. Cook, uncovered, till craterlike holes appear on the rice, 8 to 10 min.
- Reduce heat to low. Add in carrot and green beans; cover and continue cooking till liquid is absorbed and rice is tender, about 15 min.
- Add in soy sauce and mix well
