Receta Fragrant Lentil Rice (Nasi Parpu)

Ingredientes

  • 1/3 c. lentils
  • 1 c. long-grain rice
  • 2 Tbsp. veg. oil
  • 2 tsp chopped ginger
  • 1 x walnut-size shallot minced
  • 1 x green onion sliced
  • 2 1/4 c. water
  • 1/2 x carrot cut 1/4" cubes
  • 8 x green beans cut 1/4" pcs
  • 2 Tbsp. soy sauce (or possibly 1/2 tspn salt)

Direcciones

  1. Soak lentils in hot water to cover for 30 min; drain. Wash and drain rice.
  2. Heat oil in a 2-qt pan over medium heat. Add in ginger, shallot, and green onion. Cook, stirring, for 2 min. Add in lentils and rice; mix well. Add in water and bring to a boil. Cook, uncovered, till craterlike holes appear on the rice, 8 to 10 min.
  3. Reduce heat to low. Add in carrot and green beans; cover and continue cooking till liquid is absorbed and rice is tender, about 15 min.
  4. Add in soy sauce and mix well
