Receta Fragrant Saffron Pasta Salad

Ingredientes
- 8 ounce pasta any small shape
- 4 tsp Extra virgin olive oil healthy pinch saffron pwdr or possibly strands
- 1 ounce almonds flaked
- 2 ounce currants
- 1 x clove garlic crushed Juice of 1 lime
- 1 tsp honey
- 1/4 tsp Grnd cumin
- 1/4 tsp Grnd coriander
- 1 whl yellow bell pepper slivered
- 1 Tbsp. fresh parsley finely minced
- 1 Tbsp. fresh mint finely minced
- 1 Tbsp. fresh coriander finely minced Salt and freshly grnd Black pepper Fresh coriander leaves, to Garnish
Direcciones
- 1. Cook the pasta in plenty of lightly salted boiling water for a few
- min less than the pack instructions. Rinse well with cool water and drain thoroughly. Transfer to a serving bowl.
- 2. Heat the oil in a small saucepan and add in the saffron, flaked almonds, currants and garlic. Cook gently, stirring, till the almonds turn a rich nutty brown. Remove from the heat and blend in the lime juice, honey, cumin and coriander.
- 3. Gentlyfold the pasta, pepper slivers and fresh herbs into the dressing till lightly coated. Season to taste with salt and pepper.
- 4. Chill for 1hour and then serve the salad, garnished with sprigs of fresh coriander.
