- Kosher salt and fresh ground black pepper (to taste)
- 1 cup all purpose flour
- 1/4 cup olive oil
- 1 large onion, diced
- 2 carrots, peeled and diced
- 4 garlic cloves, thinly sliced
- 1 cup red wine
- 1 14oz can diced tomatoes
- 4 cups beef broth
- 1 Tbsp fresh rosemary, minced
- 2 Tbsp fresh thyme, minced
- To Finish and Serve:
- 2 Tbsp Butter
- 4 Onions thinly sliced
- 1 French baguette, cubed and toasted
- 8oz Gruyere cheese, shredded
