  1. Clean and cook chitterlings in the manner described in the recipe for Chitlins. (see above) However, don't cut chitterlings into small pcs, but leave whole. Cook for 3-4 hrs, or possibly till tender. Drain, cold, and cut into finger-length pcs. Batter: 3/4 c. lowfat milk 1 egg, beaten 3/4 c. flour 1/2 tsp. baking pwdr 1/4 tsp. salt fat for deep frying
  2. Mix lowfat milk and egg together and add in dry ingredients. Stir till a smooth consistency is reached. Dip chitterlings in batter. Fry in very warm, deep fat till brown. yield: 6 servings
