Receta Fresh Corn and Peach Salsa
This salsa makes a great side dish for salmon or chicken. I take a one pound salmon filet, cut it into two pieces. Brush with olive oil and sprinkled with fajita seasoning mix and bake in a 400 degree oven for about 12-15 minutes. Plate the salmon and spoon salsa on the side. Garnish with sprigs of cilantro.
Ingredientes
- 2 tablespoons salad oil
- 1 garlic clove, peeled and finely chopped
- 1/4 cup chopped green pepper
- 1/4 cup chopped red pepper
- 2 ears of fresh corn
- 1/2 teaspoon salt
- 1/2 teaspoon Southwest Chipotle seasoning
- 1 tablespoon lime juice
- 1 tablespoon honey
- 2 fresh peaches, peeled and cut into 1/2 cubes
- 2 tablespoons finely chopped red onion
- 1 tablespoon cilantro, finely chopped
- Additional salt and Chipotle seasoning to taste
Direcciones
- Cut corn kernels off cob.
- Heat oil in medium size saucepan.
- Saute garlic, green and red pepper, corn kernels, salt and chipotle seasoning over medium high heat for about 3-4 minutes, stirring occasionally to prevent corn from burning.
- Set aside and allow to cool to room temperature.
- Whisk together lime juice and honey.
- Add peaches, red onion, and cilantro and combine with corn mixture.
- Add additional salt and chipotle seasoning to taste.
- Cool in refrigerator for about 2 hours.
