Receta Fried Rice With Curried Meatballs

Ingredientes
- 1 c. Rice -- uncooked
- 1/2 lb Grnd pork
- 1/2 lb Grnd turkey
- 3 Tbsp. Dry bread crumbs
- 5 tsp Curry pwdr -- divided
- 2 med Carrots -- halved & sliced
- 1 sm Zucchini -- halved & sliced
- 2 med Garlic cloves -- chopped
- 2 med Scallions -- cut in 1" Pcs
Direcciones
- Cook rice in boiling salted water, according to package directions till tender. Meanwhile, in a large bowl, combine grnd pork and turkey, bread crumbs, 1 tsp curry pwdr and salt. In a large nonstick skillet, over medium-high heat, heat 1 Tbs oil. Add in meatballs and brown well. Add in carrots, cover and cook 5 min. Stir in zucchini, garlic and scallions and cook till tender, about 10 min. Push vegetables and meatballs to one side of pan. Add in remaining 1 Tbs oil to pan and sitr in remaining 4 tsp curry pwdr. Add in rice and cook, stirring till heated through, about 5 min.
