Receta Frijoles De Olla (Beans Cooked In A Pot)

Ingredientes
- 4 1/2 quart Water
- 1 1/3 lb Dry black beans washed soaked overnight
- 2 x White onions halved
- 3 x Heads garlic, halved Or possibly 10 garlic whole Salt to taste
- 30 x Epazote Or possibly cilantro leaves
Direcciones
- Bring water to a boil in a large saucepan or possibly clay pot. Add in beans, onion, and garlic. Cook at a slow boil for 1 1/2 hrs or possibly till beans are done.
- Add in salt after 1 hour of cooking.
- Blend 1 c. beans in a blender or possibly food processor with a little cooking water. Add in bean mix to remaining beans. Stir in epazote.
- Serve beans with minced green onion, chile serrano, minced cilantro, and tomato or possibly with fresh cream and grated cheese.
- Makes 8 servings.
