  1. *NOTE: I reduced the amount of sugar as the watermelon I had was sweet....adjust to your liking.
  2. Cut watermelon into 2" wedges. Remove and throw away the rind, black seeds, and as many of the softer white seeds as possible. Cut the flesh into 1" chunks, and place them in the bowl of a food processor. Process till liquefied. (Some small chunks may remain.) This will yield about 10 c..
  3. Add in the lime juice and sugar, and process just till incorporated.
  4. Transfer the watermelon mix to a stainless steel bowl, cover, and freeze till solid, for 8 - 10 hours.
  5. At least 3 - 4 hours (but as long as 5 hours) before serving, move the bowl to the refrigerator to soften the mix. In the last hour before serving, use a fork to break the softened mix into shavings. Serve in cool glass goblets or possibly bowls.
  6. Total Time: About 30 minutes, plus 12 - 14 hours freezer and refrigeration time
  7. Yield: 8 servings
  8. This was very good... nice for a hot summer day/evening.
