Receta Garlic Roasted New Potato Salad

Ingredientes
- Five pounds small red new potatoes Six cloves fresh garlic, cleaned and finely diced
- 1 x and one-half c. minced red bell pepper
- 2 c. mayonnaise, preferably Hellman's brand
- 1 x and one-half c. lowfat sour cream
- 3 Tbsp. chopped parsley
- 1 x half c. minced scallions
- 1 tsp sea salt
- 1 x pepper to taste
Direcciones
- Wash the red potatoes. Bring to a boil in salted water till tender, about 15 min.
- Cold, then cut into one-inch chunks.
- In a large bowl, combine mayonnaise, lowfat sour cream, garlic, parsley, scallions, red pepper. Mix well.
- This dressing should be smooth. Gently mix in the potatoes.
- Season with the salt and pepper to taste.
- Chill for 60 min before serving.
