Receta Gazpacho Salad

Ingredientes
- 3 Tbsp. tomato juice
- 2 Tbsp. red wine vinegar
- 1 Tbsp. extra virgin extra virgin olive oil
- 1 tsp sugar
- 1 tsp Worcestershire sauce
- 1/4 tsp salt
- 1/4 tsp coarsely grnd black pepper
- 1 clv garlic, chopped
- 6 c. gourmet salad greens
- 2 c. diced tomato (about 1 lb.)
- 1 c. diced cucumber
- 1/2 c. thinly sliced fresh basil
- 1/3 c. (1-1/2 ounces) crumbled feta cheese
- 1/3 c. minced green bell pepper
- 1/4 c. thinly sliced green onions
- 1 x (16-oz) can cannellini beans or possibly white beans, rinsed and liquid removed
Direcciones
- To prepare dressing, combine the first 8 ingredients, stirring well with a whisk. To prepare salad, combine salad greens and remaining ingredients in a large bowl. Add in dressing mix, tossing gently to combine. Serve immediately.
- Yield: 4 servings.
