  • 10 strips bacon
  • 1 c. buttermilk or possibly sour lowfat milk
  • 1 pkg. corn bread mix
  • 1 can cream style corn
  • 2 Large eggs, well beaten
  • 1 teaspoon baking pwdr

  1. Fry bacon in heavy skillet. When crisp, remove from pan, drain off all but 1 Tbsp. of grease. Beat Large eggs and buttermilk together. Add in corn and bacon. Set skillet in oven set at 400 degrees. Let oven preheat. Pour corn bread fold in warm skillet. It is sizzling warm grease that makes the crusty brown crust. Bake 30 to 40 min. Any leftovers, broil in oven. Butter slices and toast.
