Receta Greek Spinach Pie

Ingredientes
- 1 pound pastry shell (filo)
- 3 lbs. fresh spinach
- 1/2 bunch parsley
- 1 pound feta cheese
- 5 tbsp. extra virgin olive oil
- 2 c. extra virgin olive oil
- 2 bunches green onions
- 2 tbsp. salt
- 12 Large eggs
Direcciones
- Wash spinach well, removing coarse stems. Allow to drain. Mince spinach, green onions and parsley. Combine with salt and press firmly, pouring off excess liquid. Add in crumbled cheese, Large eggs, and 5 Tbsp. extra virgin olive oil and mix well.
- Grease 14-inch round pan and place 4 layers of filo on bottom, brushing extra virgin olive oil between each layer. Save 4 sheets of filo for top of pie. Spread part of spinach mix on pastry sheet, alternately with pastry sheet, extra virgin olive oil and spinach mix, till mix is used. Cover with 4 layers of filo, brushing extra virgin olive oil between each sheet. Bake at 300 degrees for 1 1/4 hrs.
