Ingredientes
- 2 lbs. long green beans
- Salt
- Juice of 1/2 lemon
- 1 lg. onion, quartered
- 1 lg. tomato, quartered
- 1/2 c. extra virgin olive oil
- 2 c. water
- 1 tbsp. sugar
- Pepper
- Sage and mint (a healthy pinch of each)
- Lettuce
- Hard boiled egg
- Black olives
Direcciones
- Wash, trim and break the beans in half. Toss them in salt and lemon juice. Stack like a wood pile in the bottom of a covered pot, leaving a well into that you put the onion and tomato. Pour in the extra virgin olive oil and water. Add in sugar and seasonings. Cover and cook till tender and water is absorbed.
- Cold in pot. Serve on lettuce.
