Receta Green Chili Egg Cups
Green Chili Egg Cups are a perfect make ahead breakfast or snack that will keep you full from all the protein!
Ingredientes
- 3 eggs
- 12 oz egg whites
- 1/3 cup cottage cheese (we like using low fat cottage cheese)
- 1/2 cup shredded pepper jack cheese
- 1/2 yellow onion, diced
- 4 oz canned green chilies
- 1 teaspoon salt
- 1/2 teaspoon pepper
Direcciones
- Preheat oven to 400 degrees. Spray 12 muffin tins with non-stick baking spray, set aside.
- In a food processor or blender, blend together eggs, egg whites and cottage cheese until completely smooth. Stir in cheese, onion, green chilies, salt and pepper.
- Evenly divide and pour egg mixture into prepared muffin tins.
- Bake for 15-17 minutes or until firm and not runny.
