Receta Green Onion Smashed Potatoes

Ingredientes
- 12 x scallions
- 1/4 c. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
- 16 x new potatoes quartered
- 1 head roasted garlic
- 1 stk unsalted butter softened
Direcciones
- Preheat oven to 450 degrees. Brush scallions with some of extra virgin olive oil and season with salt and pepper to taste. Place on a sheet pan and roast for 10 min. Remove from the oven and coarsely chop.
- Toss the potatoes with the remaining extra virgin olive oil and sprinkle with salt and pepper. Roast till just a bit overcooked but not brown. As soon as they come out of the oven, place the poates in a large mixing bowl, add in the garlic, scallions, and butter.
- Smash with a potato masher to achieve a rustic texture, not smooth. Season with salt and pepper.
- This recipe yields 8 servings.
