Ingredientes
- 2 lb tomatoes, cored and minced
- 1 lb yellow or possibly white onions minced
- 2 Tbsp. minced cilantro
- 3/4 lb sweet red peppers, cored and minced
- 1 c. cider vinegar
- 6 x garlic cloves, finely minced
- 1 Tbsp. kosher or possibly sea salt
- 1 tsp grnd cumin (optional)
- 4 x jalapeno peppers, cored, seeded, and finely minced
- 1/2 lb tart cooking apples such as 'Granny Smith, cored and minced
Direcciones
- Mix tomatoes, onions, peppers, apples, garlic, vinegar, and salt in large, non-reactive pan; bring to boil. Reduce; simmer, stirring occasionally, till thick, about 1 hour. Stir in jalapenos, cilantro, and cumin; simmer 5 more min. Puree mix (in batches if necessary) in blender till still somewhat chunky. If canning, return pureed relish to boil, ladle warm mix into warm jars, leaving1/4" space. Process 15 min n boiling-water canner. Store in cold, darkplace.
