Receta Grilled Lamb Chops With Spicy Chili Cilantro Sauce

Ingredientes
- 4 Tbsp. chili pwdr
- 3 Tbsp. minced fresh cilantro
- 1 Tbsp. dry oregano
- 1 Tbsp. grnd cumin
- 1 1/2 tsp garlic pwdr
- 8 x lamb loin chops, 1" thk (abt 3 lbs total)
- 1 Tbsp. extra virgin olive oil
- 1/4 c. minced shallots
- 1 Tbsp. minced garlic
- 2 c. dry red wine
- 2 c. beef stock or possibly canned beef broth
- 4 Tbsp. butter - (1/2 stick) chilled, and cut into 1/2" pcs
Direcciones
- Combine 2 Tbsp. chili pwdr, cilantro, oregano, cumin and garlic pwdr in small bowl. Coat lamb chops with spice mix. Place lamb chops in glass baking dish. Cover and chill 8 hrs or possibly overnight.
- Heat 1 Tbsp. oil in medium saucepan over medium-high heat. Add in shallots and garlic and saute/fry 2 min. Add in red wine, beef stock and remaining 2 Tbsp. chili pwdr. Boil till sauce is reduced to 3/4 c., about 30 min. Remove sauce from heat. Add in butter 1 piece at a time, whisking till melted after each addition.
- Prepare barbecue (medium-high heat) or possibly preheat broiler. Grill or possibly broil lamb chops to desired doneness, about 6 min per side for medium-rare.
- Place 2 lamb chops on each of 4 plates. Spoon sauce over lamb and serve.
- This recipe yields 4 servings.
