  • 8 x extra-large uncooked shrimp - (to 10) peeled, deveined
  • 2 Tbsp. extra virgin olive oil
  • 1 x garlic clove chopped
  • 1 med shallot chopped
  • 1/2 tsp basil
  • 1/2 lrg red bell pepper seeded, and cut into 1" squares
  • 1/2 lrg yellow bell pepper seeded, and cut into 1" squares
  • 1/2 lrg yellow squash cut 1/4"-thk rounds, then halved

Direcciones

  1. Place the shrimp in a bowl with the extra virgin olive oil, garlic, shallot and basil. Toss to coat throughly. Set aside and let stand for about 1 hour.
  2. Preheat the grill you will cook on. Set the pepper pcs onto the grill, then place the shrimp onto the grill. Turn both after about 1 minute. Re-turn as needed to grill thoroughly.
  3. Place the shrimp in a fan in the center of a large serving dish, and surround with the peppers. Serve immediately.
  4. This recipe yields 2 servings.
