  • 2 1/2 c. cut-up grilled vegetables in 1" pcs
  • 1/2 c. fresh mozzarella in 1/2" cubes
  • 1/4 c. thinly-sliced fresh basil leaves
  • 2 Tbsp. extra virgin olive oil
  • 6 x Large eggs beaten
  • 1/4 c. grated Parmesan cheese Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. Toss vegetables, mozzarella and basil together in bowl. Set aside.
  2. Heat oil in 10-inch nonstick skillet over medium heat. Combine Large eggs and 3 Tbsp. Parmesan and pour into skillet. Cook Large eggs 1 minute, then add in vegetable mix and salt and pepper to taste. Cook till bottom of frittata is golden brown and set but top is still wet, about 10 min.
  3. Wrap skillet handle in foil. Sprinkle remaining cheese on top of frittata, then broil frittata till top is set and slightly brown, 3 to 5 min. Invert frittata onto serving plate, cut into wedges and serve.
  4. This recipe yields 4 servings.
