Receta Grilled Vegetable Summer Rolls

Ingredientes
- 1 pkt rice paper wrappers - (abt 16)
- 1 quart warm water
- 4 c. coarsely-minced grilled vegetables (eggplant, zucchini, onions, red bell peppers)
- 2 Tbsp. sesame oil
- 2 Tbsp. sesame seeds toasted
- 1/3 c. pickled ginger
- 2 c. mixed salad greens
- 2 ounce fresh mint
- 2 bot rice vinegar - (1 quart ea)
- 3 c. sugar
- 1 x red bell pepper finely diced
- 1/2 lrg red onion diced
- 1 1/2 Tbsp. ginger
- 3/4 c. cilantro or possibly mint finely minced
- 1/2 Tbsp. garlic chili sauce
Direcciones
- In a bowl combine grilled vegetables, sesame seeds, sesame oil, mint.
- Transfer warm water to bowl which will fit the whole rice wrapper flat. Place one sheet of rice paper in water till softened. Place the wrapper on plastic board or possibly towel or possibly wooden cutting board. Take a small amount of the greens and place on lower third of rice paper. Place about 1 1/2 Tbsp. of vegetable mix on greens. Place a few piece of pickled ginger over veggies. Roll up roll in spring roll fashion. Serve with Sweet Thai Chili Sauce.
- Sweet Thai Chili Sauce: In a medium saucepan, over medium-high heat, combine rice vinegar and sugar. Cook till reduced to a syrup-like consistency. Combine remaining ingredients to reduced liquid and mix well. Serve with summer rolls. (Makes 1 qt)
