Receta Grilled Zucchini And Goat Cheese Parcels

Ingredientes
- 6 med Zucchini sliced thinly lengthwise
- 10 1/2 ounce Hard goat's cheese diced Grated zest of 1 lemon Juice of 1 lemon
- 1 sm bunch Fresh flat-leaf parsley minced
- 1 sm bunch Fresh basil leaves roughly torn
- 3 Tbsp. Extra-virgin extra virgin olive oil - (to 4 tbspns) Salt to taste Freshly-grnd black pepper to taste
Direcciones
- Preheat a ridged grill pan on top of the stove for about 10 min. Grill the zucchini slices till tender and lightly browned on both sides.
- In a bowl, mix the cubes of cheese with the lemon zest and some of the minced herbs, tossing to coat the cheese. Place a piece of cheese on each zucchini slice. Roll up and secure with a toothpick. Put the rolls into a bowl and drizzle over a little extra virgin olive oil and the lemon juice. Sprinkle with the remaining herbs and season with salt and black pepper. Chill for 30 min. If preparing in advance, leave in the refrigerator covered with plastic film.
- When ready to serve, add in a little extra fresh lemon juice and black pepper and stir gently.
- This recipe yields 4 to 6 servings.
