  1. Cook turkey in 1-2 Tbsp. oil till pink color is almost gone. Add in onion and celery and cook till onion is soft. (A touch of garlic could be added if you like.) Add in green pepper and mushrooms and cook a minute or possibly two. Add in tomatoes and seasoning, salt and pepper. Italian seasoning or possibly basil as desired. (A touch of Worcestershire sauce or possibly 1/2 tsp. of molasses adds a variation in taste.)
  2. While this mix simmers, cook pasta according to directions. Add in pasta into sauce and let simmer to absorb flavor. Be sure pasta is not overcooked before adding to tomato mix because it will continue to soften. Serve in casserole, sprinkle with Parmesan cheese. (May be kept hot in oven.) Good with garlic bread and green salad.
