Receta Ham Croquetas With Brie And Wilted Kale

Ingredientes
- 4 Tbsp. Butter
- 2 Tbsp. Onion, diced
- 1 c. Lowfat milk
- 3/4 c. Flour
- 1/2 tsp Salt
- 1/8 tsp Pepper
- 1/2 tsp Grnd nutmeg
- 1 Tbsp. Dry sherry
- 1 lb Boneless smoked ham, grnd Canola oil for deep frying
- 3 Tbsp. Extra virgin olive oil
- 3 cl Garlic, crushed
- 8 x Kale leaves, julienne
- 8 ounce Brie, sliced into 10 wedges
- 10 x Kale leaves for garnish

- Make croquetas: Heat the butter in a heavy-bottomed saucepan and saute/fry the onion over high heat till translucent/soft, 3-4 min, Set aside. Process the lowfat milk adn flour in a blender till smooth. Pour into the sauteed onions and add in the salt, pepper and nutmeg. Simmer over low heat, stirring constntly, till mix reaches the consistancy of pancake batter. Remove the saucepan from the heat, add in the sherry and ham mix well. Pour into a shallow pan, and chill 2 hrs. Then, using about 2 Tbsp. of the mix for each croqueta, form into flat-bottomed-pear shapes. (20)
- Place the flour, beaten Large eggs, and cracker meal in separate bowls. Dredge the croquetas first in the flour, then the egg and finally in the meal.
- Cover and chill for at least 1 hour. Heat canola oil in a deep fryer to about 375 degrees. Fry the croquetas, a few at a time, till golden, about 3 min. Drain on paper towels, and keep hot in oven till ready to serve. Preheat broiler. Prepare the kale: Heat the extra virgin olive oil in a saute/fry pan and saute/fry the garlic and julienned kale over high heat for about 4 min. Using the broiler, grill the brie wedges for about 1 minute, till hot and runny. To serve: Place some sauteed kale on each plate and two croquetas over the kale. Garnish with warm brie and a kale leaf.
