Receta Hawaiian Filled Cookie

Ingredientes
- 2/3 c. shortening
- 2/3 c. sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 c. pineapple filling
- 1 teaspoon grated lemon peel
- 2 c. sifted flour
- 1 1/2 teaspoon baking pwdr
- 1/2 teaspoon salt
Direcciones
- Cream shortening, sugar and large eggs. Beat well. Stir in vanilla, lemon peel. Sift flour, baking pwdr, salt together. Stir into cream mix. Refrigerate. Roll on floured board 1/8 inch thick. Cut dough with 2 1/2 inch cutter. Place half the circle in an ungreased baking sheet. Spread tsp of filling almost to edges. Cut slit in remaining circle, place over filling, seal with a fork. Bake at 400 degrees for 8 to 10 min.Filling: Cook 1/2 cup sugar, 1 teaspoon cornstarch, 1 can crushed pineapple, cook till thick and cool.
