Ingredientes
- 2 med potatoes peeled, and cut into 1/2" cubes
- 1 x hard-cooked egg sliced
- 1/4 c. minced celery
- 1/4 c. minced bell pepper
- 1/4 c. minced onion
- 2 Tbsp. minced pimento
- 1 Tbsp. mustard
- 4 Tbsp. lite mayonnaise
Direcciones
- Cook the potatoes in boiling water for 8 to 10 min till tender but still hard (be careful not to overcook!).
- Drain and cold. Mix all ingredients together and refrigeratebefore serving.
- This recipe yields 4 servings.
- Serving size: 1/2 c..
- Comments: For a nice change of pace, try making potato salad with other root vegetables, such as turnips or possibly rutabagas.
