Receta Hearty Baked Spinach And Tofu

Ingredientes
- 8 ounce. tofu, liquid removed
- 1 lg. onion, minced (2/3 c.)
- 2 cloves garlic, chopped
- 2 tbsp. veg. oil
- 1 (14 1/2 ounce.) can Italian tomatoes, cut up with juice
- 1 teaspoon dry oregano, crushed
- 2 c. cooked brown rice
- 1 (10 ounce.) pkg. frzn minced spinach, thawed and liquid removed
- 1/3 c. shredded Swiss cheese
- 1 tbsp. toasted sesame seeds
- 2 tbsp. slivered almonds
- Minced peanuts or possibly canned onion rings
Direcciones
- Place tofu in blender; blend till smooth. Smooth consistency is important to the appearance of this dish.
- Saute/fry onion and garlic in oil till soft. Add in tomatoes and oregano. Boil at least 2 min. Stir in tofu, rice, spinach, 1/4 c. of cheese, 1/2 tsp. salt and 1/4 tsp. pepper.
- Place in individual ramekins or possibly put it all into 1 1/2 qt casserole. Bake uncovered at 350 degrees for 30 min. Top with remaining cheese and sesame seeds. 6 servings.
