Receta Hearty Potato And Onion Soup

Ingredientes
- 4 med. potatoes, diced
- 3 med. onions, thinly sliced
- 8 c. water
- 1 tbsp. salt
- 3 tbsp. butter
- 2 sprigs fresh parsley, minced
Direcciones
- Place the potatoes, onions, water, and salt in a large saucepan. Bring to a boil and then simmer for 45 min, partially covered. The vegetables should be tender at the end of which time. Mash the vegetables while in the soup. Just prior to serving, add in butter and stir till it is completely melted. Sprinkle minced parsley over the top and serve.
