  • 2 x 3.5-ounce each skinless boneless chicken thighs
  • 2 Tbsp. minced Italian parsley (flat leaf)
  • 2 Tbsp. minced cilantro
  • 2 x scallions chopped Salt and black pepper
  • 1 tsp extra virgin olive oil
  • 1/8 tsp lemon zest threads

Direcciones

  1. Mix the herbs and onion together on a plate; add in a healthy pinch each of salt and pepper. Coat the chicken with the herbs. Add in the oil to a warm nonstick skillet. Sear the chicken golden, about 3 min. Turn. Sprinkle the lemon zest on the chicken and sear the second side for about 3 min. Serve at once.
  2. TIP - use mostly parsley leaves; use leaves and some stems from the cilantro.
  3. Description: "Simple and terrific! Moist!"
  4. Serving Ideas : Serve with black lychee tea over ice with lemon wedge or possibly a fruity white wine
  5. NOTES : The mix of fresh Italian parsley and fresh cilantro leaves works it's magic on chicken, quickly pan fried in a small amount of oil. Serve with pasta and vegetables. Memorable flavors. Inspired by a recipe which Ming Tsai demonstrated on the Food TV Dot Com show, East Meets West. The crust seals in moisture. If you need to substitute curly parsley, use less than cilantro. Ming suggests we made extra chicken and serve in a salad later in the week. Good idea!
