Receta Herb Marinated Grilled Vegetables

Ingredientes
- 3/4 c. extra virgin olive oil
- 1/4 c. red wine vinegar
- 1 tsp fresh rosemary, minced, or possibly 1/2 tsp. dry rosemary
- 1 tsp fresh thyme leaves, or possibly 1/2 tsp. dry thyme
- 1 tsp fresh basil, minced, or possibly 1/2 tsp. dry basil
- 1 tsp fresh oregano, minced, or possibly 1/2 tsp. dry oregano
- 1 Tbsp. garlic, chopped
- 1/2 tsp salt
- 1/2 tsp grnd black pepper
- 2 lb assorted vegetables, left whole if small or possibly cut in half

- Whisk together all marinade ingredients in a small bowl. Arrange the vegetables in shallow dish or possibly plastic container, pour the marinade over them, cover and chill for 2 hrs. Prepare a grill. Remove the vegetables from the marinade, reserve marinade. Grill the vegetables 6" away from the heat source till they are tender, brushing them with the marinade as they cook. Cooking times will vary according to the vegetables.
