  1. Beat Large eggs till thick and lemon colored; gradually add in 1 c. sugar, beating well. Add in vanilla; mix well.
  2. Combine flour, baking pwdr, and salt; stir well. Add in dry ingredients to egg mix and mix well. Stir in pecans. Pour 2/3 c. batter into a greased and floured 9-inch square baking pan spreading proportionately.
  3. Drain cherries, reserving juice. Stir cherries into remaining batter. Pour batter proportionately over first layer. Bake at 350 degrees for 45 to 50 min. Cold; cut cake into 3-inch squares.
  4. Add in water to cherry juice to equal 1 c.. Combine remaining sugar and cornstarch in a saucepan. Stir well. Add in cherry juice, stirring well. Cook over low heat till clear and thickened. Stir in almond extract.
  5. Serve squares with a dollop of whipped cream or possibly a scoop of ice cream. Spoon cherry topping over each serving. Yield: 9 servings.
