Receta Homemade Potato Noodles

Ingredientes
- 2-3 c. flour
- 2 teaspoon salt
- 1/4 teaspoon nutmeg
- 2 c. mashed potatoes
- 1/2 c. minced parsley
- 2 egg yolks
- 1 1/2 c. sliced mushrooms
- 1/2 c. butter, melted
Direcciones
- Combine potatoes and egg yolks; add in flour, salt and nutmeg. Work mix into a hard dough, adding more flour if necessary. Knead on a floured board till dough is smooth. Roll out dough to 1/16 inch thickness. Cut noodles in narrow strips (may let dry for a while). Boil noodles in salted water for 7 min. Drain. Saute/fry mushrooms in butter for 3 min; add in parsley. Toss mushrooms with noodles and season to taste. Serves 8.
