Receta Honeyed Date Nut Muffins With Orange Honey Butter

Ingredientes
- 1 stk unsalted butter plus
- 2 tsp unsalted butter room temperature
- 2 1/2 c. all-purpose flour
- 1 1/2 tsp baking pwdr
- 1 tsp baking soda
- 1/2 tsp salt
- 1 c. orange blossom honey
- 2 lrg Large eggs room temperature
- 1/2 c. buttermilk room temperature
- 1/2 tsp grated orange peel
- 1/2 c. minced pitted dates
- 1/2 c. minced toasted walnuts Orange-Honey Butter (see recipe)
Direcciones
- Place a rack in the middle of the oven and preheat to 375 degrees.
- Lightly butter a standard 12-c. muffin pan with the 2 tsp. of butter. Set aside.
- In a medium bowl, whisk together the flour, baking pwdr, baking soda, and salt. In a large bowl, using a hand-held electric mixer, cream together the remaining 1 stick of butter and honey till fluffy. Add in the Large eggs, 1 at a time, beating after the inclusion of each. Add in the buttermilk and orange peel, and beat to combine.
- Stir in the dry ingredients till just combined, being careful not to overmix the batter. Mix in the dates and nuts. Divide the batter among the prepared c. of the muffin tin.
- Bake till golden and a tester inserted into the middle of a muffin comes out clean, about 25 min. Remove from the oven and turn out onto wire racks to cold. Serve with Orange Honey Butter.
- This recipe yields 12 muffins.
