Receta Hot Goto (porridge with Ox tripe)
This is a very common Filipino 'meryenda' (snack in-between meals).
Ingredientes
- 1/4 OX tripe, sliced into strips, pressure cooked for 1hr
- 1/4 Malagkit rice (sungsung), washed
- 1 tsp garlic, diced
- 1 tsp ginger, julliened
- 1 med red onion, diced
- 1/4 cup patis
- salt and pepper to taste
- 5 cups Beef Broth (add more if needed)
- 3 hard boiled eggs, sliced
- 1/4 cup spring onions, sliced into tiny bits
- 1/4 cup fried garlic
- 1 cup crushed chicharon
Direcciones
- Saute garlic, ginger, onion in a deep pot.
- Add the malagkit rice and stir fry for a minute.
- Add the cooked Ox tripe into the mix and stir fry more.
- Add 1/2 of the patis (fish sauce) and stir fry again.
- Pour in the beef broth and let it simmer while stirring occasionally to avoid rice sticking on the bottom of the pot.
- Let it boil and simmer until rice is very cooked. You will know that it is very cooked when the rice already popped or broke and mushy.
- Add the salt and pepper according to taste.
- Add more beef broth when necessary to avoid the rice sticking to each other.
- To serve: Use a ladle and pour goto onto a deep bowl, top it with chicharon, egg, spring onions, and garlic. I like adding calamansi in it before i eat, its optional tho.
