Receta Hot Goto (porridge with Ox tripe)

This is a very common Filipino 'meryenda' (snack in-between meals).

  • 1/4 OX tripe, sliced into strips, pressure cooked for 1hr
  • 1/4 Malagkit rice (sungsung), washed
  • 1 tsp garlic, diced
  • 1 tsp ginger, julliened
  • 1 med red onion, diced
  • 1/4 cup patis
  • salt and pepper to taste
  • 5 cups Beef Broth (add more if needed)
  • 3 hard boiled eggs, sliced
  • 1/4 cup spring onions, sliced into tiny bits
  • 1/4 cup fried garlic
  • 1 cup crushed chicharon

Direcciones

  1. Saute garlic, ginger, onion in a deep pot.
  2. Add the malagkit rice and stir fry for a minute.
  3. Add the cooked Ox tripe into the mix and stir fry more.
  4. Add 1/2 of the patis (fish sauce) and stir fry again.
  5. Pour in the beef broth and let it simmer while stirring occasionally to avoid rice sticking on the bottom of the pot.
  6. Let it boil and simmer until rice is very cooked. You will know that it is very cooked when the rice already popped or broke and mushy.
  7. Add the salt and pepper according to taste.
  8. Add more beef broth when necessary to avoid the rice sticking to each other.
  9. To serve: Use a ladle and pour goto onto a deep bowl, top it with chicharon, egg, spring onions, and garlic. I like adding calamansi in it before i eat, its optional tho.
