Ingredientes
- 1 x tomato minced
- 1/4 c. minced onion
- 1 Tbsp. minced jalapeno
- 2 tsp minced parsley
- 3 x Large eggs beaten
- 1 Tbsp. margarine
- 1/2 c. shredded lettuce
- 2 x flour tortillas
Direcciones
- In a bowl, combine, minced tomato, minced onion, minced jalapenos, and minced parsley; set aside.
- In a non-stick skillet, cook beaten Large eggs in margarine, stirring occasionally, till set.
- Arrange shredded lettuce on flour tortillas, then divide and spoon the Large eggs onto the tortillas. Top with the tomato salsa. Roll up.
