- 1 tablespoon, good olive oil
- 1/2lb new potatoes/small golden potatoes, boiled
- 2 slices Spanish jamon serrano/serrano ham, cut into long ribbons
- 2 tablespoons sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon chopped cornichons
- juice of half a lemon
- salt and black pepper
