Receta Illiria Bean Soup Pressure Cooker Version

Ingredientes
- 1 lb white beans
- 8 c. water
- 2 c. water
- 6 c. chicken broth
- 1 1/2 c. minced onion
- 2 1/2 c. carrots sliced or possibly diced
- 1 1/2 c. celery sliced or possibly diced
- 16 ounce tomatoes freshly grnd pepper to taste
- 1 x bay leaf
- 2 Tbsp. extra virgin olive oil
- 3/4 tsp salt optional
- 1/4 tsp warm pepper sauce or possibly to taste
Direcciones
- 1. Cook beans in 8 c. of water for 35 min under high pressure.
- Drain.
- 2. Return beans to pressure cooker. Add in broth, 2 c. water, onion, carrots, celery, tomatoes with juice, pepper and bay leaf.
- 3. Cook under high pressure for 20 min.
- 4. Remove bay leaf. Add in extra virgin olive oil. Season with salt and warm pepper sauce.
- Pressure cookers are amazing things when it comes to cooking beans!
- I often eat this soup for lunch with a hunk of good bread and some fruit.
